
Dr Sam Prince
Meet Sam Prince, philanthropist, entrepreneur, medical professional, and aid worker. His academic journey commenced at the age of 16, culminating in the attainment of a degree in Medicine and Bachelor of Surgery from Melbourne’s Monash University.
Sam's success as an entrepreneur is rooted in his intrinsic drive to innovate and address challenges. His career has been marked by several accolades, including noteworthy titles such as EY National and Regional Social Entrepreneur of the Year in 2018, "The Australian of the Year" for the ACT in 2012, and the 2012 Monash University Distinguished Alumni Award.
As well as Sam Prince Hospitality Group, Sam Prince's diverse portfolio encompasses ventures such as Zambrero, Next Practice, SODOTO (SO / See One, DO / Do One, TO / Teach One), Shine, and Zapid Hire. Each venture represents a facet of his ongoing efforts to contribute meaningfully to various domains and remains dedicated to making a positive impact through his endeavors.

Director
Ian has been serving as a Director with the group since Mejico opened its doors in Sydney back in 2013. Over the years, Ian has played a pivotal role in steering the group towards success. His extensive experience and deep understanding of the industry have been invaluable assets.

Karen Westfield
Chief Operations Officer
A hospo-veteran, Karen moved from London over 17 years ago. With a career working for Antonio Carluccio and Jamie Oliver, among others, she’s been with the group 8 years. Now firmly settled in Australia with her gorgeous English Bulldog, with no intention of returning to the UK, her two loves of food and live music, are easily satisfied in the Sydney hospo scene. Karen is never one to pass up a signature G&T at INDU!

Amanda Fuller
Group Executive Chef
Always inspired by travel, Amanda has worked in kitchens in Uluru and Tasmania before heading abroad to London for 10 years. Working alongside the Great British Menu judge Oliver Peyton, Amanda brings unique experience to the SPHG team.

Victoria Gill
Group Marketing & Events Manager
Victoria joined the SPHG team in 2017 as host in one of our Mejico outposts - here she discovered her passion for hospitality!
In 2019, she transitioned to Kid Kyoto in the CBD, where she began exploring digital marketing and social media. With her in-depth knowledge of SPHG brands, Victoria assumed the role of Marketing & Events Manager for the group in mid-2021. Victoria’s secret to a good night out, starts with a couple Pickled Jalapeno Tommy’s margaritas at Mejico! -
Tom Sinclair
Group Operations Manager
Tom reached our shores in early 2016, hailing from England and promptly started as a waiter at Mejico Sydney. Since finding his love for Sydney & hospitality, he has become a valued member of the SPHG family, working in most roles & in every venue!
Tom left us briefly to work with Campari, where he became an expert in all things beverages! Joining us again in 2024 as our Group Operations Manager, we are glad to have him back. If he’s not enjoying a Guiness at his local, you’ll find him knocking back a Newtowner at Kid Kyoto. -
KIM BEDECARATS
Group General Manager
Kim started her hospitality journey at 16 in a small café in Italy, and worked her way up through London, Antigua, and Sydney, embracing the industry’s fast pace and vibrant energy. She joined the company in the midst of the 2020 pandemic as Assistant Restaurant Manager at Kid Kyoto and have since expanded her role across all three venues. Whether it’s ciao, hello, hola, or bonjour, you’ll find her floating between them all, ensuring every guest experience is as warm and welcoming as the first greeting.
